Straight from the family recipe notebook, this sausage and rice casserole is the kind of simple, hearty weeknight meal Grandma could stretch to feed whoever happened to stop by for dinner.
Ingredients
- 1 lb sausage
- 1 medium onion
- 2–3 stalks celery, chopped
- 3/4 cup rice
- 1½ cups boiling water
- 1 pkg Lipton chicken noodle soup
- 2 cups boiling water
Instructions
- Brown sausage with onion and celery, then drain.
- Combine all ingredients and cook until rice is tender.
- Transfer to a casserole dish.
- Bake at 350°F for 1 hour.
