This one was Grandma's special-occasion recipe, carefully written out in the family notebook. Golden and crispy on the outside with a melty cheese and mushroom filling hiding inside — it never failed to impress.
Ingredients
- 6–7 chicken breasts
- 1/2 cup finely chopped mushrooms
- 2 tbsp butter
- 2 tbsp flour
- 1/2 cup light cream
- 1/4 tsp salt
- Dash cayenne pepper
- 1/4 cup shredded sharp cheese
- Flour for dusting
- 2 beaten eggs
- 3/4 cup fine dry bread crumbs
Instructions
- Cook mushrooms in butter.
- Sprinkle in flour and stir.
- Add cream, salt, and cayenne. Stir until thickened.
- Add cheese and stir until melted.
- Pour into a pie plate and refrigerate for 1 hour.
- Flatten chicken breasts and season with salt.
- Place a portion of cheese mixture on each breast and wrap the chicken around it.
- Dust with flour, dip in beaten eggs, and roll in bread crumbs.
- Fry until golden, about 5 minutes.
- Blot excess oil.
- Bake at 325°F for 35–45 minutes.
