This one was Grandma's special-occasion recipe, carefully written out in the family notebook. Golden and crispy on the outside with a melty cheese and mushroom filling hiding inside — it never failed to impress.

  1. Cook mushrooms in butter.
  2. Sprinkle in flour and stir.
  3. Add cream, salt, and cayenne. Stir until thickened.
  4. Add cheese and stir until melted.
  5. Pour into a pie plate and refrigerate for 1 hour.
  6. Flatten chicken breasts and season with salt.
  7. Place a portion of cheese mixture on each breast and wrap the chicken around it.
  8. Dust with flour, dip in beaten eggs, and roll in bread crumbs.
  9. Fry until golden, about 5 minutes.
  10. Blot excess oil.
  11. Bake at 325°F for 35–45 minutes.
