This is one of those recipes that fed the whole family and then some. Pulled straight from the family recipe notebook, this large-batch sweet and sour meatball recipe was always a crowd favorite at potlucks and holiday gatherings.
Ingredients
Meatballs
- 2 lbs ground beef
- 1 onion, finely chopped
- 1 green pepper, diced
- 2 eggs
Sauce
- 1 can pineapple (with juice)
- 1/2 cup vinegar
- 4 tsp ketchup
- 1½ cups brown sugar
- 3 tsp soy sauce
- 3 tbsp corn starch
- 3/4 cup cold water
Instructions
- In a large bowl, combine ground beef, finely chopped onion, diced green pepper, and eggs. Mix well and form into meatballs.
- Brown the meatballs in a skillet over medium-high heat until golden on all sides.
- In a separate bowl, mix together the pineapple (with juice), vinegar, ketchup, brown sugar, soy sauce, corn starch, and cold water until smooth.
- Place browned meatballs in a baking dish and pour the sauce evenly over the top.
- Bake at 350°F for 30 minutes, until the sauce is bubbling and the meatballs are cooked through.
- Serve over a bed of steamed rice.
