Straight from the family recipe notebook, these frosted pumpkin squares were Grandma's answer to autumn. Soft, spiced cake topped with cream cheese frosting — they disappeared from the pan before they had a chance to cool.
Ingredients
- Cake
- 4 eggs
- 2 cups flour
- 2 cups sugar
- 1 cup oil
- 1 tsp vanilla
- 2 cups pumpkin
- 1 tsp salt
- 1 tsp baking soda
- 2 tsp cinnamon
- Frosting
- 3 oz cream cheese
- 2 cups powdered sugar
- 1 stick butter
- 1 tsp vanilla
Instructions
- Mix all cake ingredients together.
- Pour into a sheet pan.
- Bake at 350°F for 25–30 minutes.
- Beat frosting ingredients until smooth.
- Frost when cooled.
